Miro & Dave Portnoy
Miguel Miro grew up in Northeast NJ where he experienced high quality pizza near his hometown. Miro was influenced by both his Mother and Grandmother who were both exceptional cooks. Around the age of 10, his loving mother brought him grocery store doughs to bake pizza at home. Miro was always chasing the recipe for the perfect red sauce from his favorite pizzerias and Italian restaurants.

Over many years Miro was able to replicate most if not all of his favorite iconic street food, and restaurant dishes such as Filet Mignons, Chicken Parmesan, Italian Hoagies, Meatballs, Hibachi, Cheeseteaks, etc., but had yet to crack the secret red sauce recipe.
It was around 2007 when Miro set out to recreate his favorite childhood pizza from memory. He got serious and purchased a stand mixer, sourced high quality ingredients, and pizza baking equipment for his home kitchen. First he perfected making pizza dough from scratch. Then after a lifetime of experimentation Miro successfully reverse engineered his favorite top secret recipe pizza sauce.

For several years Miro invited his guests over who gave him valuable feedback which helped him perfect his pizza. He also travelled to legendary bucket list pizzerias in NY, NJ, New Haven such as Famous Joe’s, Best Pizza, Sallie’s Apizza, Frank Pepe’s, Sam’s Pizza Palace, Grimaldi’s, DiFara, Prince St., to rub elbows with legendary Pizzaiolos, and draw further inspiration.
